Recipe: Sopas

With the freezing cold weather in NYC, soup is a must. On the menu tonight is Sopas (Filipino Chicken Soup). It is a very simple and quick recipe that you can make anytime during the week. Hope you try it out and enjoy!

Chicken Sopas  
(I made a smaller serving size, but you can double ingredients to make it a family size. This soup recipe can also be adjusted to your personal taste.)



Ingredients:
2-3 pieces chicken thighs 
½ head small cabbage, sliced
½ medium yellow onion, diced 
2 pieces hotdog, diced
1-2 carrots, diced 
1 cup elbow macaroni 
1-2 cloves of garlic, minced 
1-2 tablespoons of cooking oil 
½ cup of milk
Salt and ground black pepper to taste 

Instructions:

  1. In a medium pot, add the chicken breasts and cover with water. Cook in medium heat for 20-30 minutes (depending on size). 
  2. Separate the chicken from broth. Let the chicken cool down and then shred. Set both shredded chicken and broth aside. 
  3. Heat oil in a large soup pot. Sauté the garlic and onion till it's translucent in color. Add in carrot as well as salt and pepper for seasoning. Continue to sauté for 2 to 3 minutes. 
  4. Add the shredded chicken and hotdog pieces. Stir and cook for another 2-3 minutes. Then pour in chicken broth and let boil. 
  5. Add macaroni and cook for 10-15 minutes (or until macaroni is tender). 
  6. Add cabbage next. Stir and cook for 3 to 5 minutes. 
  7. Stir in milk and bring to a simmer. 
  8. Serve and Enjoy :)
